Turkey Piccata with Fettucine
This recipe is from The New Dieter's Cookbook.
I wish I'd taken a picture before I started eating it. Super yummy!!! I definitely want to make this again!!

I am not a fan of stir fry. O avoid even being in the room when it's being cooked because the smell is so nauseating. But my husband likes it, so I took one for the team and made it. It must have tasted good to him. He had a big first serving and then seconds. I'm trying to be good and have some as well, but I'm REALLY struggling. (big, deep breath). Okay, here I go.......

Monday's meal: Chicken with Tomatillos and Poblanos with a side of Black Beans with Turkey Bacon. Rob said it was good, and it was ok to me, but not sure I liked it enough to make it again. Today's dish I liked better. Pork Chops stuffed with cream cheese, jalepenos, spinach and a little mozzarella. Green salad and cantaloupe as sides. Mmmm. I didn't follow a recipe and probably baked it too long. I'm guessing that's why it's so wrinkly. And a little tough. But good flavor.
I'm going to blog about my Puerto Rico trip that I went on a couple weeks ago as soon as all the pics are together and I can get them from my brother.

It's been a busy few weeks since I quit my job. I'm trying to learn how to be a good homemaker, but like any new job, it takes a bit of training. The last 3 weeks haven't been spent much at home. Mom and I went to Kansas to see Grandpa Jones. He hasn't been doing too well. Just as we got there, he went into the hospital. Hes still hanging on, but we aren't sure for how long.
The weekend after that, Rob and I went to Seattle for a pharmacy convention. We went to a Star Wars exhibit and then I explored the city with my cousins while he was in his meetings. One of the most disgusting things I've ever seen was the Gum Wall.Rob got out of meetings and we had dinner on the pier at The Crab Pot and then explored a little more.It was a good trip.
This week we're in Vernal. Rob is working some shifts here. The hotel is awesome and has a great exercise room and pool. We have dinner with his cousins tonight and tomorrow or Thursday I will spend some time with my friend, Sharon.
I'm enjoying my new life even though it's different and busy.

Excitement, anticipation, apprehension, check.
It's been a little while since I had a real post up here. I wish I had more pics to make it exciting like so many of my friends do, but this will have to do for now.
My great big announcement is.........drumroll please.................................................no, I'm not pregnant. :) But I finally found the courage to do something that I've said I'd do for the past 5 years now. I put in my notice at work. That's right. After 6 years, 1 month, and 15 days of working for Beehive Clothing, driving to SLC everyday, injuring my body in the mind-numbing, monotonous work, I will be done. February 18th is the day I've chosen to be my last. Why that day, you might ask? Well, I don't have much of an answer besides it just feels like it's time. Hooray!!!!
So, you are probably wondering what I'm going to do with the rest of my life. Well, if you have an idea, let me know, cuz I don't really know. So far my list consists of: cleaning my apartment, cooking regularly, exercising and getting healthy so maybe I can have a baby, catching up on my journal, reading more, studying the gospel more, getting more involved with my ward, looking into some volunteer work, maybe finding a part-time job with something that actually interests me, and doing a little bit of traveling, among other things. It'll be a new adventure with new trials, but also great rewards. Hopefully it'll feel more where I'm supposed to be than I've felt for the past several years.
I'm excited for the traveling that we have planned so far this year. So far we are going to Seattle for a Pharm convention and Puerto Rico with my family after that. Who knows where else this year will take us. New adventures for sure. I'm excited for Puerto Rico because I'll be able to put an X next to another of my "things I want to do in my life." Bioluminescent Bay, here I come! :)
Well, that's it for now. I've got to go to bed. Early morning tomorrow for work.
